Two Easy-to-Pack Snacks
Take these treats along with you on your next outdoor adventure.
Road Trip Bar Cookies
Total Time : 1 hour     Prep Time: 15 minutes
Bake Time : 30 minutes     Servings : 39 bar-shaped cookies

Ingredients   
2 Tablespoons vegetable shortening, butter or margarine  
(grease  pan & the aluminum foil)
2-1/2 cups rolled oats
2/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/4 teaspoon baking soda 1/2 cup mini chocolate morsels
1/2 teaspoon salt
1/2 cup honey
1/2 cup vegetable oil
1-1/2 teaspoons vanilla extract
Optional: 1/2 cup raisins (or raisins/chopped nuts mixed)

Directions
Preheat oven to 350 degrees F. Generously grease a 9-by-13-
inch baking pan. Line pan with the folded foil across length of pan
with 2 inches folded over both sides. Generously grease foil with
vegetable shortening.

In a large bowl mix together dry ingredients: oats, brown sugar,
cinnamon, flour, baking soda, chocolate morsels and salt. Add
honey, oil and vanilla extract, plus any optional nuts and raisins.
Mix well and spoon into baking pan. Using the bottom of a
measuring cup, press mixture firmly into the pan until evenly
distributed and smooth on top.

Bake 25 to 30 minutes, until bars are slightly darker at the edges
than the center. Cool on a wire rack 15 minutes. Cut with a
serrated knife into 3-by-1-inch bars.

Wrap individually in snack-size Ziploc® Brand Snack Bags or
store in an airtight container like a Ziploc® Brand Container with
Snap 'n Seal Lid.

Fruity Peanut Butter Sandwich

Total Time : 10 hour     Prep Time: 5 minutes
Servings : 4 large sandwiches (6 small ones)

Ingredients   
2 Granny Smith apples
3/4 cup crunchy peanut butter
1/4 cup celery, diced small
1/4 cup raisins 4 English muffins, toasted
1 cup alfalfa sprouts (or 4 leaves of romaine or iceberg lettuce)

Directions
Cut both apples into halves; core and remove the seeds. (Leave
the peel on.) Dice one apple into small pieces. Place the peanut
butter, celery, raisins and the chopped apple in a small bowl and
stir until combined.

Split and toast the English muffins. While the muffins are toasting,
slice the second apple into thin slices.

Remove the muffin halves from the toaster and spread 1/4 of the
peanut butter mixture on the bottom half of each English muffin.
Top with alfalfa sprouts or lettuce, and place apple slices on top.
Serve open faced or cover with other half of the English muffin.

Grilled Potatoes

Ingredients
4 small potatoes
2 tbs. Butter
1 teas. Garlic

Directions
Cut potatoes in half, spread butter on
potatoes, sprinkle garlic, put on grill
and cook for 20-30 minutes depending
on heat.
Hobo Potatoes

Ingredients
4 medium potatoes
1/4 cube butter
Garlic to taste
1 Red Onion
2 tbs. Sweet basil
1/4 teas salt
1/4 teas pepper

Directions

Dice Potatoes, onions, add butter
pads, garlic, salt, pepper, sweet basil.
Wrap in foil, individually. Place on grill
and cook approximately 30 Min.
Ritz Fried Chicken

Ingredients
4-6 Chicken Thighs
2 eggs
12  Ritz Crackers (crumbled)
Salt
Pepper
Garlic
1/2 cup Vegetable Oil

Directions
Wash chicken, salt, pepper, and garlic
chicken. Beat eggs, roll chicken in
eggs then dust with crumbled crackers,
place in greased skillet and cook until
brown.
Eggs on a Raft

Take a slice of bread and cut out a
circle about 2 inches in diameter.

Toast slowly and lightly on both sides,
using a forked stick.

In the frying pan, melt a hunk of butter,
put the toast in the pan and wait until it
sizzles. Now break the egg and place it
into the hole so the yoke stays put.
Heat slowly and evenly.

Sprinkle salt and pepper over the eggs
and then cover. It will be done when
the top of the egg is white. If you have
no cover, turn toast over when
underside of egg is cooked.
Camp  Banana Desert
bananas (one per person)
sugar
lemon
Put a ripe, un-peeled banana into the ashes of
a good fire. Roast for about half an hour until
the skins look black. Rake out the bananas
and split them down the centre. Sprinkle the
fruit inside with sugar and lemon juice. Eat as
you like, with a spoon or your fingers.
Baked Apple
apples

aluminum foil
raisins
cinnamon
Core an apple and place it on a square of aluminum foil. Fill the core
hole in with raisins, brown sugar and a dash of cinnamon. Wrap foil
around it and bake for ten minutes on the hot coals.

Omelet In A Baggy

Ingredience:

2 eggs
3 teas. Bacon cooked and chopped
3 teas. Mushrooms finely chopped
3 teas. Bell Peppers finely chopped

Directions:

Beat eggs. Pour eggs in a zip lock baggy, add bacon, mushrooms,
bell peppers. Place in boiling water for approximately 10 minutes or
until done. Optional:  add any other meat or vegetable that you like.

Cake Kabobs
Angel Food or Pound Cake ( cut in squares)     
Condensed Milk
Flake Coconut

Cut pound cake or angel cake in 1 1/2 inch cubes. Spear each on
fork. Dip in sweetened condensed milk. Roll in flaked coconut to
cover. String cubes on skewers and toast over VERY HOT coals,
turning often until golden.
